Chef Ken Chong

Palace Garden Head Chef Ken Chong possesses almost 20 years of experience in reinterpreting the authentic flavours of rare royal Cantonese dishes from the Qing Dynasty. Using contemporary approaches and techniques, he creates exquisitely prepared and presented Taishi cuisine that preserves its true essence in taste, aroma and appearance.

Chef Seven

Chef Seven is the co-founder of YUE and the Executive Chef of YUE Creative Cantonese Cuisine. He was honoured with the “2021 Black Pearl Restaurant Guide Young Chef” award, and under his leadership the restaurant has received the prestigious Two Diamonds from the Black Pearl Restaurant Guide for four consecutive years.  Combining contemporary techniques with a thorough understanding of Cantonese cuisine, his exquisite dishes bring new inspiration to tradition.
